[:it]In occasione della Milano Bookcity, TENOHA Milano ha una nuova sorpresa per tutti noi: Il famosissimo chef Hirohiko Shoda presenterà il suo nuovo libro “Washoku, l’arte della cucina giapponese”. TENOHA Milano dà anche la possibilità di conoscere lo chef, direttamente nello spazio &|WORK. Qui lo chef Hiro sarà disponibile per rispondere ad alcune domande, firmare la vostra copia del libro e spiegarvi di più di questo nuovo progetto.
Intanto prepariamoci all’incontro capendo di cosa tratta il libro prima di farlo un po’ più da vicino proprio insieme allo chef.
∼Washoku. L’arte della cucina giapponese ∼
Per i giapponesi, non è importante solamente il cibo in sè, ma anche tutto quello che lo circonda, come il servire, la convivialità, l’accoglienza e le regole dell’etichetta. Una vera e propria arte che ha conquistato l’Occidente e che l’UNESCO ha riconosciuto patrimonio culturale immateriale dell’umanità.
E chi è Hirohiko Shoda, meglio conosciuto anche nei programmi TV come Chef Hiro?
Nato a Nara, ha cominciato fin da subito a studiare la cucina italiana e internazionale fino a diventare famoso nel mondo della ristorazione. Il trasferimento in Italia è avvenuto nel 2006 e da qui anche le varie collaborazioni con importanti chef e conoscitori dell’arte della cucina. Docente e autore del Master Japan, corso specialistico di cucina autentica giapponese, Hiro è anche protagonista dei programmi “Ciao, sono Hiro” e “Hiro in Japan” su SKY Gambero Rosso Channel.
Nel marzo 2019 riceve il titolo ufficiale di Ambasciatore della Cucina Giapponese in Italia da parte del MAFF Japan (Ministero dell’Agricoltura, delle Foreste e della Pesca del Giappone), conferito presso l’Ambasciata del Giappone a Roma.
La filosofia della sua cucina si basa sull’amore ed il rispetto della Natura, ogni ingrediente viene esaltato e rispettato fino alla persona che si nutrirà del risultato. Sono dei veri e propri viaggi nella cultura orientale, atmosfere particolari da non perdere.
“Io amo la cucina italiana come quella giapponese, sembrano distanti e diverse, ma in fondo sono molto simili nella loro ritualità familiare, nel loro essere gesto di amore, di conforto, di condivisione, di piacere”. Queste sono le sue parole e questo il suo motto: la Natura insegna tutto.

Born in Nara, he immediately began studying Italian and international cuisine until he became famous in the restaurant world. He moved to Italy in 2006 and since then he had various collaborations with important chefs and connoisseurs of the art of cooking. Lecturer and author of the Master Japan, a specialized course in authentic Japanese cuisine, Hiro is also the protagonist of the programs “Ciao, sono Hiro” and “Hiro in Japan” on SKY Gambero Rosso Channel.
In March 2019 he received the official title of Ambassador of Japanese Cuisine in Italy from the MAFF Japan (Ministry of Agriculture, Forests and Fisheries of Japan), conferred at the Embassy of Japan in Rome.
The philosophy of his cuisine is based on love and respect for nature, each ingredient is enhanced and respected up to the person who will nourish himself with the result. They are real journeys in oriental culture, special atmospheres not to be missed.
“I love Italian cuisine like the Japanese one, they seem distant and different, but in the end they are very similar in their family ritual, in their being a gesture of love, comfort, sharing, pleasure”. These are his words and this is his motto: Nature teaches everything.
