Il Menù

20 maggio – 2 giugno: CHICKEN NANBAN

宮崎県・チキン南蛮 Chicken Nanban dalla pref. di Miyazaki.
Direttamente dalla regione del Kyūshū, uno speciale pollo fritto karaage marinato in salsa agrodolce e accompagnato con salsa tartara. Questa ricetta sembra sia nata nella penisola Iberica per poi essere adattata in stile Giapponese nella prefettura di Miyazaki.

3 giugno – 16 giugno: TAI-CHAZUKE

徳島県・ 鯛茶漬け Tai-chazuke (Orata con riso in zuppa dashi) dalla pref. di Tokushima che si trova a nord dell’isola di Shikoku, nella parte meridionale del Giappone. La cucina tradizionale si basa soprattutto sulle varie tipologie di pesce e frutti di mare e da qui il famoso Taichazuke, ovvero riso bianco, orata, sesamo e alghe nori il tutto accompagnato dalla salsa dashi giapponese. Tutto questo rende il piatto delicato e armonico, un sapore unico che difficilmente potrete dimenticare e trovare altrove.

17 giugno – 30 giugno: OSTRICHE FRITTE

広島県 ・かきフライ Ostriche fritte dalla pref. di Hiroshima, al sud del Giappone, di fronte al mare interno di Seto e all’isola di Shikoku. Le Kaki furai, ossia le ostriche fritte, sono il piatto scelto per il viaggio che farete in questa prefettura, non solo per la sua preparazione ma anche per l’alta qualità appunto delle ostriche rinomata in tutto il Giappone.

1 luglio – 14 luglio: NAGANO SOBA + ONIGIRI CON SAPORE DI NAGANO

長野県・長野そば: Nagano-soba dalla pref. di Nagano. Eccoci arrivati alla parte più centrale del Giappone, la regione di Chūbu, da cui sono stati scelti per la continuazione del viaggio, i Nagano Soba Noodles. Nagano è una zona particolarmente famosa per la produzione della Soba che, per chi già non la conoscesse, è una pasta sottile e dal tono scuro di grano saraceno accompagnata spesso con un apposito brodo freddo.

15 luglio – 28 luglio: HITSUMABUSHI

愛知県・櫃まぶし: Hitsumabushi, il piatto più famoso della prefettura Di Aichi.
L’anguilla alla griglia, e non cotta come accade nel resto del Giappone, fa da protagonista in questo piatto unico e croccante che TENOHA vi dà l’occasione di assaggiare con il riso bianco e brodo di dashi da versare in accompagnamento al piatto.

29 luglio – 10 agosto: CHAN-CHAN-YAKI

Ed eccoci giunti col nostro viaggio nella prefettura più a nord del Giappone, Hokkaido, con il suo 北海道県・ちゃんちゃん焼き Chan-Chan Yaki, un piatto tipico e dal sapore casalingo. Il nome del piatto riporta alla cottura eseguita “Chacha”, che è un’onomatopea che descrive un gesto rapido. Si tratta di salmone cotto al vapore accompagnato da verdure di stagione, erbe di montagna e Miso. (Per quest’ultima ricetta si ringrazia la fonte http://kyoudo-ryouri.com/it/food/1402.html).

Directly from the Kyūshū region, a special karaage fried chicken marinated in sweet and sour sauce and accompanied with tartar sauce. This recipe seems to have its origins in the Iberian peninsula and then it was adapted in Japanese style in the Miyazaki prefecture.

広島県 ・かきフライ Fried Oyster by Hiroshima prefecture, located in the south of Japan, facing the inland sea of Seto and the island of Shikoku. The Kaki furai, or fried oysters, is the dish chosen for the journey you’re making in this prefecture, not only for its preparation but also for the high quality of oysters renowned throughout Japan.

1 July – 14 July: NAGANO SOBA + ONIGIRI WITH TASTE OF NAGANO

長野県・長野そば: Nagano-soba from Nagano prefecture. Here we are in the most central part of Japan, the Chūbu region, from which the Nagano Soba Noodles were chosen for the continuation of our journey. Nagano is a particularly famous area for the production of Soba and for those who don’t know it yet, we are talking about a thin pasta with a dark tone of buckwheat often accompanied by a special cold broth.

15 July – 28 July: HITSUMABUSHI

愛知県・櫃まぶし: Hitsumabushi, the most famous dish of the Aichi prefecture.

The grilled eel, and not cooked as it happens in the rest of Japan, is the protagonist in this unique and crunchy dish that TENOHA gives you the opportunity to taste with white rice and dashi broth.

29 July – 10 August: CHAN-CHAN-YAKI

And here we arrive with our trip to the northernmost prefecture of Japan, Hokkaido. With its 北海道県・ちゃんちゃん焼き  Chan-Chan Yaki, you will have the opportunity to taste a typical dish with a homey flavor. The name of the dish refers to the cooking named “Chacha”, which is an onomatopoeia that describes a quick gesture. It is steamed salmon served with seasonal vegetables, mountain herbs and Miso.
